The other day my
son and I drove to the city to go grocery shopping. He rearranged his schedule
a little bit to accommodate this outing with no grumbles. Our schedules are
nutty and so the 45-minute drive to and from the store is a nice way to chat or
goof off with loud music. He’ll be off to university this summer so the more
time spent together now, is 100% better. While in the store he excitedly
mentioned that we should get phyllo pastry and spinach and…and…and maybe even. He
rattled off the ingredients for spanakopita.
“I’ll make it
this weekend,” he promised.
Well, life gets in the way and when he was called into
work and later took his darling for a spur of the moment dinner date. I decided
to have a date with a kg of spinach.
The recipe was lovely and there was just one thing that my
son mentioned that I forgot to do, cut the spanacopita into squares prior to
cooking…
I knew that.
Told him that he should have done the same thing when
he made the baklava…
