The other day my son and I drove to the city to go grocery shopping. He rearranged his schedule a little bit to accommodate this outing with no grumbles. Our schedules are nutty and so the 45-minute drive to and from the store is a nice way to chat or goof off with loud music. He’ll be off to university this summer so the more time spent together now, is 100% better. While in the store he excitedly mentioned that we should get phyllo pastry and spinach and…and…and maybe even. He rattled off the ingredients for spanakopita.
“I’ll make it this weekend,” he promised.
Well, life gets in the way and when he was called into work and later took his darling for a spur of the moment dinner date. I decided to have a date with a kg of spinach.
The recipe was lovely and there was just one thing that my son mentioned that I forgot to do, cut the spanacopita into squares prior to cooking…
I knew that.
Told him that he should have done the same thing when he made the baklava…

New Years and a recipe


I had a wee itch to change willowcat studio; the look and name..
All the names that piqued my interest were already taken, except one (which I have saved).
In the end I choose to keep the old name for a new year, and what a brilliant year I expect it to be!

More creating, love, sleep and peace.
Time better spent
New adventures
Good health and fitness
Family, friends and a something wonderful.

I reckon it will be a very good year.

Turkey Dinner Melts
Makes 4 open face sandwiches
on medium heat sautée until soft (about 10 minutes):
2 small onions sliced
1 can of sliced mushrooms (it's all I had, fresh would be yummier)
3 cloves of garlic minced
season with salt and pepper

Add and cook till heated through:
1-2 cups cubed turkey
1/2 cup corn
1 cup gravy

Toast 4 slices of whole grain bread.
Spread with mayo and cranberry sauce, top with turkey mixture and grated mozzarella cheese
Pop in oven to broil for a few minutes!

Now a rest from turkey.

hoppy birthday!!!












It was my mom's birthday the girls and I made lasgana and cake using Fiveforty's recipe, we added some whipped cream and strawberries. The whole meal was amazing, the company awesome (and nearly complete.. maybe next year) read more about my mommawitch here at the transcanada etsy team blog
